My wife and I are vegans and one of the best chains we've discovered recently for us is Toojays Deli. They have at least 10 different vegan entree options on their menu. Some you have to just order without the cheese. They have a section of their menu entitled "Vegetarian". I had a Mediteranian Pita which was vegan and all raw as well. Delicious. All of their other breads have cheese and/or butter but the plain old Italian is vegan. Not the greatest sandwich around but when traveling is a handy option.
