You can purchase these vegan cookbooks from the VRG Book Catalog here: <a href=\"http:\/\/www.vrg.org\/catalog\">http:\/\/www.vrg.org\/catalog <\/a><\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.vrg.org\/blog\/wp-content\/uploads\/2017\/03\/passover.jpg\" alt=\"passover\" width=\"188\"class=\"aligncenter size-full wp-image-10640\" \/><\/p>\n<p><strong><br \/>\nNut \u201cCheese\u201d Surprise <\/strong>(from <em>No Cholesterol Passover Recipes<\/em>, by Debra Wasserman)<br \/>\n(Serves 8)<\/p>\n<p>Cheese:<br \/>\n\u00bd cup raw cashews<br \/>\n\u00bd cup water<br \/>\n\u00bc cup lemon juice<br \/>\n1 Tablespoon vegetable broth<br \/>\n2 Tablespoons oil<br \/>\nGarlic powder and paprika to taste<br \/>\n\u00bd small ripe tomato, chopped<\/p>\n<p>Preheat oven to 350 degrees. In a blender cup, blend cashews, water, lemon juice, and broth together. Slowly add oil. Then add garlic powder, paprika, and tomato and blend well for 1 minute. Once the \u201ccheese\u201d is made add the ingredients below.<\/p>\n<p>6 potatoes, chopped and cooked<br \/>\n1 onion, chopped<br \/>\n3 carrots, sliced thinly<br \/>\n2 green peppers, chopped finely<\/p>\n<p>Mix well and pour into a large baking dish. Bake in oven for 30 minutes at 350 degrees. Serve warm.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.vrg.org\/blog\/wp-content\/uploads\/2017\/03\/veganpassoverrecipes.jpg\" alt=\"veganpassoverrecipes\" width=\"172\" height=\"272\" class=\"aligncenter size-large wp-image-10642\" \/><\/p>\n<p><strong><br \/>\nPear and Apple Slaw<\/strong> (from <em>Vegan Passover Recipes<\/em>, by Nancy Berkoff)<br \/>\n(Serves 5-6)<\/p>\n<p>Make a double batch of this recipe, as the flavor gets even better the second day!<\/p>\n<p>1 pound (about 3 cups) fresh pears<br \/>\n\u00bd cup (about 4 ounces) green or tart apple<br \/>\n2 Tablespoons lemon juice<br \/>\n1 cup finely shredded green cabbage<br \/>\n1 cup finely shredded red cabbage<br \/>\n2 Tablespoons oil<br \/>\n1 Tablespoon vinegar<br \/>\n\u00bd teaspoon black pepper<\/p>\n<p>Wash and dice pears and apples (don\u2019t peel), place in a large bowl, and toss with lemon juice. Add green and red cabbage and toss. In a cup, mix oil, vinegar, and pepper until combined. Toss with fruit\/vegetable mixture until well coated. Chill for at least 30 minutes before serving.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.vrg.org\/blog\/wp-content\/uploads\/2017\/03\/ljvc.jpg\" alt=\"ljvc\" width=\"188\" height=\"283\" class=\"aligncenter size-large wp-image-10641\" \/><\/p>\n<p><strong><br \/>\nPolish Plum and Rhubarb Soup<\/strong> (from <em>The Lowfat Jewish Vegetarian Cookbook<\/em>, by Debra Wasserman)<br \/>\n(Serves 6)<\/p>\n<p>1 pound plums, pitted and chopped<br \/>\n1 pound rhubarb, chopped<br \/>\n10 cups water<br \/>\n\u00bc cup plus 1 Tablespoon apple juice concentrate<br \/>\n\u00bc teaspoon powdered cloves<br \/>\n1\u00bd teaspoons cinnamon<\/p>\n<p>Place all the ingredients in a large pot and bring to a boil. Lower heat, cover pot, and simmer 30 minutes.
