{"id":14875,"date":"2020-02-04T09:00:00","date_gmt":"2020-02-04T14:00:00","guid":{"rendered":"https:\/\/www.vrg.org\/blog\/?p=14875"},"modified":"2020-01-27T14:26:30","modified_gmt":"2020-01-27T19:26:30","slug":"cooking-vegan-chili-at-christopher-place","status":"publish","type":"post","link":"https:\/\/www.vrg.org\/blog\/2020\/02\/04\/cooking-vegan-chili-at-christopher-place\/","title":{"rendered":"Cooking Vegan Chili at Christopher Place"},"content":{"rendered":"\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"160\" height=\"160\" src=\"https:\/\/www.vrg.org\/blog\/wp-content\/uploads\/2020\/01\/vrg-logo.jpg\" alt=\"\" class=\"wp-image-14876\" srcset=\"https:\/\/www.vrg.org\/blog\/wp-content\/uploads\/2020\/01\/vrg-logo.jpg 160w, https:\/\/www.vrg.org\/blog\/wp-content\/uploads\/2020\/01\/vrg-logo-150x150.jpg 150w\" sizes=\"auto, (max-width: 160px) 100vw, 160px\" \/><\/figure>\n\n\n\n<p>By Emilio Gironda <\/p>\n\n\n\n<p>On Tuesday, January 21, 2020 it was\nmy pleasure to join The Vegetarian Resource Group volunteer extraordinaire\nMarcy Schveibinz and University of Maryland Intern for a Day Teni Faleti for a\nHealthy Vegan Cooking Class held at Christopher Place in the City of Baltimore.\nChristopher Place, through the auspices of Catholic Charities, is a residential\nemployment program that provides education, training, and recovery support to\nformerly homeless men of the Baltimore area.<\/p>\n\n\n\n<p>The class consisted of eight\nwell-dressed men who watched and learned from Marcy as she explained the\nfundamentals of vegan living, and demonstrated how to cook up some vegan chili.\nWhile hesitant at first, they quickly warmed up to Marcy\u2019s pleasant demeanor\nand helpful, non-judgmental presentation. With Marcy mincing up some onions and\ngarlic, intern Teni took control of the wok and started saut\u00e9ing, quickly\nfilling the air with the aroma.<\/p>\n\n\n\n<p>As Marcy continued her food prep,\nshe answered questions about living vegan, about food choices, about vitamins,\nand about protein. With everything saut\u00e9ing in the wok, a few more minutes and\nthe chili was ready to go. Everyone quickly lined up and filled their bowls\nwith the meal, most adding some vegan sour cream on top. The room got quiet as\neveryone tried what was certainly their first foray into vegan chili. While\nsome of them only ate a small amount, several went back for seconds. I, of\ncourse, had a bowl myself and it was great! <\/p>\n\n\n\n<p>Once they finished eating, the\nstudents filed out of the classroom and on to the next class. It was\ninteresting to me that I could actually see the demeanor of the students change\nas class progressed moving from polite nonchalance to, at least for a few of them,\ngenuine interest. Kudos to Marcy, Teni, and everyone at Christopher Place for\nintroducing the benefits of healthy living through a vegan diet.
