Many of the recipes in this book will\ntake under 10 minutes to prepare. Below are two recipes perfect for the summer\nfrom this cookbook.<\/p>\n\n\n\n<p><strong>Fresh Summer Squash Soup<\/strong><\/p>\n\n\n\n<p>(Serves 4-6)<\/p>\n\n\n\n<p><em>This soup has a\ndelicate flavor and a wonderful aroma.<\/em><\/p>\n\n\n\n<p>1\u00bd pounds fresh yellow squash or zucchini (about 4 cups),\nwashed and ends trimmed off<\/p>\n\n\n\n<p>2 cups vegetable broth or stock<\/p>\n\n\n\n<p>\u00bc cup chopped onions<\/p>\n\n\n\n<p>1 clove garlic, minced<\/p>\n\n\n\n<p>2 Tablespoon chopped fresh parsley or cilantro<\/p>\n\n\n\n<p>\u00bd teaspoon thyme<\/p>\n\n\n\n<p>1 teaspoon white pepper<\/p>\n\n\n\n<p>\u00bc cup chopped, cooked vegan fake meat such as Tofurky,\nveggie hot dogs or sausage, Field Roast, etc. (optional)<\/p>\n\n\n\n<p>Cut squash into small cubes or chunks. In a 2-quart\ncasserole or bowl, combine all ingredients, stirring to mix. Cover with vented\nplastic or lid and microwave on HIGH for 12 minutes or until vegetables are\ntender. Stir at least twice during cooking. Place 2 cups of the soup in a\nblender or food processor and process until smooth. Return to remaining soup\nand stir to combine. Microwave on HIGH for 2 minutes or until hot.<\/p>\n\n\n\n<p>Note: this soup works well with any soft-shelled squash,\nsuch as zucchini, crookneck, delicato, and patty pan. You can mix several\nsquashes in one batch, if desired. Do not prepare this soup with frozen or\ncanned squash, as the texture and flavor will be lacking.<\/p>\n\n\n\n<p><strong>Tri-Colored Herbed Peppers<\/strong><\/p>\n\n\n\n<p>(Makes 4 servings as a side dish or dip. If pur\u00e9ed, makes\nabout 1\u00bd cups sauce.)<\/p>\n\n\n\n<p><em>Serve this dish as a\nside dish, sauce, or condiment.<\/em><\/p>\n\n\n\n<p>2 teaspoons olive oil<\/p>\n\n\n\n<p>1 medium red bell pepper, seeded and cut into thin slices\n(about \u00be cup)<\/p>\n\n\n\n<p>1 medium orange or yellow bell pepper, seeded and cut into\nthin slices<\/p>\n\n\n\n<p>1 medium green bell pepper, seeded and cut into thin slices<\/p>\n\n\n\n<p>1clove garlic, minced<\/p>\n\n\n\n<p>1 Tablespoon balsamic vinegar or red sherry<\/p>\n\n\n\n<p>1 Tablespoon fresh basil, minced<\/p>\n\n\n\n<p>1 teaspoon dried oregano<\/p>\n\n\n\n<p>1 teaspoon dried sage<\/p>\n\n\n\n<p>1 teaspoon black pepper<\/p>\n\n\n\n<p>In a 2-quart bowl or casserole, toss oil and peppers and\ngarlic. Microwave on HIGH for 2 minutes or until peppers are just tender. Add\nremaining ingredients, cover, and microwave on HIGH for 1 minute. Stir to\ncombine flavors and serve.<\/p>\n\n\n\n<p>Notes: If a smooth sauce is desired, microwave the cooked\npeppers for an additional 1-1\/2 minutes. Place in a food processor or blender\nand process until pur\u00e9ed.
