Try these:<\/p>\n\n\n\n<p><strong>Saut\u00e9ed Collard Greens and Tomatoes <br>\n<\/strong>(Serves 4)<\/p>\n\n\n\n<p>1 teaspoon oil<\/p>\n\n\n\n<p>1 pound collards, chopped<\/p>\n\n\n\n<p>2 ripe tomatoes, chopped<\/p>\n\n\n\n<p>2 teaspoons lemon juice<\/p>\n\n\n\n<p>1\/2 teaspoon garlic powder<\/p>\n\n\n\n<p>1\/4 teaspoon mustard powder<\/p>\n\n\n\n<p>Saut\u00e9 all ingredients together over\nmedium-high heat for 7 minutes. Serve warm.<\/p>\n\n\n\n<p><strong>Broiled Herbed Tomatoes (from <em>Simply\nVegan<\/em>)<\/strong><\/p>\n\n\n\n<p>(Serves 3)<\/p>\n\n\n\n<p>3 tomatoes, cut in half<\/p>\n\n\n\n<p>1 Tablespoon vegan margarine<\/p>\n\n\n\n<p>1 teaspoon dried basil<\/p>\n\n\n\n<p>2 Tablespoons nutritional yeast<\/p>\n\n\n\n<p>Dash of salt and pepper<\/p>\n\n\n\n<p>Place margarine, basil, yeast, salt, and pepper on top of\ntomatoes. Broil for 4 minutes, until tops are slightly brown.<\/p>\n\n\n\n<p><strong>Tomato Sauce (<\/strong><strong>Sugo di pomodoro fresco from <em>Vegans Know How to Party<\/em>)<br>\n<\/strong>(Serves 4)<\/p>\n\n\n\n<p>This is an uncooked\ntomato sauce, great for fresh tomatoes that are ripe or overly ripe. This sauce\nis not meant to sit, as it is most flavorful freshly prepared and served. This\nsauce will not freeze well, so make just enough to top al dente pastas, rice,\nor steamed greens.<\/p>\n\n\n\n<p>1\u00bd pounds (about 4 cups) peeled, seeded, and chopped fresh\ntomatoes<\/p>\n\n\n\n<p>3 chopped green onions<\/p>\n\n\n\n<p>2 cloves garlic, minced<\/p>\n\n\n\n<p>3 Tablespoons chopped fresh basil<\/p>\n\n\n\n<p>2 Tablespoons olive oil<\/p>\n\n\n\n<p>Combine all ingredients in a glass or plastic bowl (not\nmetal).
