Below are\nsome easy recipes you can whip up in no time!<\/p>\n\n\n\n<p><strong>Speedy Tostadas (from <em>Vegan Meals for One or Two<\/em>)<\/strong><\/p>\n\n\n\n<p>(Serves 2)<\/p>\n\n\n\n<p><em>Use taco shells, tortillas, or even pita bread for this recipe.<\/em><\/p>\n\n\n\n<p>3\/4 cup\nveggie chili (canned or leftover)<\/p>\n\n\n\n<p>2 vegan taco\nshells<\/p>\n\n\n\n<p>1\/3 cup\nshredded lettuce<\/p>\n\n\n\n<p>1\/4 cup\nchopped bell peppers<\/p>\n\n\n\n<p>1\/4 cup\nsalsa<\/p>\n\n\n\n<p>2\nTablespoons vegan sour cream or shredded vegan cheese, if desired<\/p>\n\n\n\n<p>Warm chili\non a stove or in a microwave until heated through. Divide chili in half and\nplace in taco shells. Top with remaining ingredients.<\/p>\n\n\n\n<p><strong>Tofu Eggless Salad (from <em>Meatless Meals for Working People<\/em>)<\/strong><\/p>\n\n\n\n<p>(Serves 6)<\/p>\n\n\n\n<p><em>Serve on a bed of lettuce, with crackers, or on whole grain toast with\nlettuce and sprouts.<\/em><\/p>\n\n\n\n<p>1 pound firm\ntofu, drained and crumbled<\/p>\n\n\n\n<p>1 stalk\ncelery, finely chopped<\/p>\n\n\n\n<p>1 large\ncarrot, grated<\/p>\n\n\n\n<p>3\nTablespoons sweet pickle relish<\/p>\n\n\n\n<p>2\nTablespoons vegan mayonnaise<\/p>\n\n\n\n<p>Salt,\npepper, and dill weed to taste<\/p>\n\n\n\n<p>In a\nmedium-size bowl mix all the ingredients together. <\/p>\n\n\n\n<p>These\nrecipes are taken from books published by The Vegetarian Resource Group.
