We interviewed one of our interns at each school.\u00a0 <\/p>\n\n\n\n<p>At Cornell\nUniversity (located in Ithaca, New York):<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Tofu stir-fries <\/li><li>Vegetarian sushi\n<\/li><li>Burrito nights\n(rice, beans, and guacamole) <\/li><li>Lentil and\npotato stew<\/li><li>Poke bowls <\/li><\/ol>\n\n\n\n<p>At Iowa\nState University\n(located in Ames, Iowa):<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>At Heaping\nPlato: Build your own bowl with turmeric rice, falafel, and toppings<\/li><li>At Heaping\nPlato: Build your own entr\u00e9e with Pita, spicy falafel, and toppings<\/li><li>At Clydes: Vegan\nfalafel burger<\/li><li>At The\nRoasterie: Sesame Tofu Wrap<\/li><li>At Clydes: Plain\nbagel with peanut butter and a fruit cup<\/li><\/ol>\n\n\n\n<p>At Johns\nHopkins University\n(located in Baltimore, Maryland):<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Fruit and\nSunButter<\/li><li>Veggie burger\nwith salad<\/li><li>Vegan stir-fry\nnoodles<\/li><li>Customizable\nsalad bar (faro, mixed greens, bell peppers, cucumbers, carrots, chickpeas,\nsunflower seeds, and olives). <\/li><\/ol>\n\n\n\n<p>At North Carolina State University (located in Raleigh, North Carolina):<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Fresh Sweetened\nPeanut Butter with Banana on Toast<\/li><li>Cereal with Soy\nMilk<\/li><li>Mushroom\nPortabella Burger<\/li><li>Red Lentil Dal<\/li><li>Black Bean Soup<\/li><\/ol>\n\n\n\n<p>At University\nof North Carolina Chapel\n Hill:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Beyond\nBurger with lettuce, tomatoes, pickles, onion, and ketchup with fries on the\nside<\/li><li>Build\nYour Own Burrito Station (Rice, beans, lettuce, tomato, salsa, avocado, and\nchips)<\/li><li>Rainbow\nVegetable Curry with basmati rice (with added tofu)<\/li><li>Roasted\nsweet potato with black beans, tomato, and hummus<\/li><li>Falafel\nwrap with pita, falafel, lettuce, tomato with Greek salad and hummus side<\/li><\/ol>\n\n\n\n<p>Clare Broud, a\nstudent at UNC Chapel Hill advises about variety as a vegan college student.\n\u201cThe biggest tip for any college student eating at a dining hall is to find\nways to have variety.&nbsp; If you&#8217;re eating\nin the dining hall all year, no matter [what] your diet, you will get tired of\nthe food; that&#8217;s just how dining hall food works. But changing up what you eat\ncan help curb the monotony. At some\nschools, students also are able to make their own vegan dishes, or find great\noptions at restaurants on campus!\u201d Broud said. <\/p>\n\n\n\n<p>For example, here are some\noptions to make yourself, as one college student did at the University of Maryland\n(located in College Park, Maryland):<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Refried beans\n(saut\u00e9ed mashed beans with spices) and vegetables in a wrap<\/li><li>Lentil\/chickpea\npasta with sauce and veggies<\/li><li>Overnight oats\nwith fruit and nut butter<\/li><li>Big salad with\nhomemade Caesar salad dressing<\/li><li>Tofu veggie\nstir-fry<\/li><\/ol>\n\n\n\n<p>At the\nUniversity of Minnesota Twin Cities, restaurants on campus serve these vegan\noptions:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>At\nMim&#8217;s Cafe: Falafel sandwich\u2014pita wrap with crispy fresh falafel, hummus,\nlettuce, tomato, onion, and pickled red cabbage<\/li><li>At\nMim&#8217;s Cafe: Falafel Plate\u2014Hot crispy falafel with your choice of toppings, rice\nor hummus or fresh french fries<\/li><li>At\nTeahouse: Kung pao tofu\u2014crispy tofu lightly covered in a chili sauce with bell\npeppers, peanuts, onions, and rice on the side <\/li><li>At\nthe Afro deli: Sambusa vegetarian\u2014seasoned potatoes wrapped in a dough and\nfried to crisp<\/li><\/ol>\n\n\n\n<p>At North Carolina State\n University even the\nlibrary serves vegan cinnamon almond cookies!
