{"id":15974,"date":"2020-08-21T09:00:26","date_gmt":"2020-08-21T13:00:26","guid":{"rendered":"https:\/\/www.vrg.org\/blog\/?p=15974"},"modified":"2020-08-07T12:42:51","modified_gmt":"2020-08-07T16:42:51","slug":"cheezy-crackers","status":"publish","type":"post","link":"https:\/\/www.vrg.org\/blog\/2020\/08\/21\/cheezy-crackers\/","title":{"rendered":"Cheezy Crackers"},"content":{"rendered":"\n<figure class=\"wp-block-image is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.vrg.org\/blog\/wp-content\/uploads\/2020\/08\/cheezcrackers-189x300.jpg\" alt=\"\" class=\"wp-image-15975\" width=\"300\" height=\"485\"\/><\/figure>\n\n\n\n<p>By Rissa Miller, Senior Editor <em>Vegetarian Journal<\/em><\/p>\n\n\n\n<p>(Makes about 60 crackers)<\/p>\n\n\n\n<p>1 cup all purpose flour<\/p>\n\n\n\n<p>\u00bc cup nutritional yeast<\/p>\n\n\n\n<p>1 Tablespoon ground flaxseed meal<\/p>\n\n\n\n<p>\u00bc teaspoon ground turmeric<\/p>\n\n\n\n<p>\u00bc teaspoon smoked paprika<\/p>\n\n\n\n<p>Pinch salt<\/p>\n\n\n\n<p>2 Tablespoons olive oil<\/p>\n\n\n\n<p>2 teaspoons yellow mustard<\/p>\n\n\n\n<p>5-6 Tablespooons water<\/p>\n\n\n\n<p>Parchment paper<\/p>\n\n\n\n<p>Preheat oven to 350 degrees. <\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp; In a food\nprocessor or strong blender, combine flour, nutritional yeast, flaxseed meal,\nturmeric, paprika, and salt. Pulse twice to mix. Add olive oil and yellow\nmustard. Pulse again several times to combine. Next add 4 Tablespoons of water.\nProcess until well blended and when done, see if dough will hold its form in a\nball. (Open it and check by hand.) If it doesn\u2019t roll into a ball, add only one\nmore Tablespoon of water at a time until it holds a ball shape. Don\u2019t overdo it\non adding water, or the cracker dough will become too moist.<br>\n&nbsp;&nbsp;&nbsp;&nbsp; Tear off two sheets of parchment\npaper that are the size of the baking sheet you plan to use in the oven. Form\ndough into a ball on top of one piece of parchment on the counter and allow to\nrest for 10 minutes for flaxseed meal to form its bonds. When ready, top with a\nsecond parchment sheet and roll the dough until it\u2019s an evenly shaped oval or\nrectangle, less than 1\/8 inch, about 2 millimeters\u2014very thin to get crispy!\nRemove the top layer of parchment and slide onto the baking sheet. Using a\nknife or pizza cutter, score the dough into crackers, about 1\u00bd inch square.\nIt\u2019s likely they won\u2019t be perfect\u2014that\u2019s part of the charm of homemade crackers.<br>\n&nbsp;&nbsp;&nbsp;&nbsp; Bake at 350 degrees, turning once\nduring baking, for 18-20 minutes until edges are browned and crackers are\ncrisp.
