This meal comes\ntogether with the whir of a blender and some boiled pasta. The flavors of fall\nmeld perfectly with the savory smokiness of paprika and fire-roasted\ntomatoes.&nbsp;<\/p>\n\n\n\n<p>1 box pasta of choice<\/p>\n\n\n\n<p>Smoky Sweet Potato Sauce:<\/p>\n\n\n\n<p>1 cup cooked, peeled sweet potato (also can use canned sweet\npotato, pumpkin or butternut&nbsp;squash)<\/p>\n\n\n\n<p>15-ounce can white beans, rinsed\nand drained<\/p>\n\n\n\n<p>1 head roasted garlic (see note below)<\/p>\n\n\n\n<p>1\/4 cup plain, unsweetened vegan milk<\/p>\n\n\n\n<p>2 Tablespoons nutritional yeast<\/p>\n\n\n\n<p>1 teaspoon dried sage<\/p>\n\n\n\n<p>1\/2 teaspoon&nbsp;dried thyme<\/p>\n\n\n\n<p>Splash of liquid smoke (optional)<\/p>\n\n\n\n<p>Pinch ground white pepper<\/p>\n\n\n\n<p>Pinch red pepper flakes<\/p>\n\n\n\n<p>Pinch ground nutmeg<\/p>\n\n\n\n<p>Salt, to taste<\/p>\n\n\n\n<p>15-ounce can fire-roasted, chopped tomatoes<\/p>\n\n\n\n<p>1 red onion, cut into half moons<\/p>\n\n\n\n<p>2 teaspoons olive oil<\/p>\n\n\n\n<p>4 cups fresh arugula (baby kale or spinach also work)<\/p>\n\n\n\n<p>To serve- sprinkle with extra red pepper flakes, chopped\nfresh basil, sliced almonds, or chopped walnuts\/pecans<\/p>\n\n\n\n<p>Cook pasta according to package directions. Drain and set\naside.<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp; In a blender or\nfood processor, combine sweet potato, roasted garlic, milk, nutritional yeast,\nwhite beans, sage, thyme, liquid smoke, white pepper, red pepper flakes,\nnutmeg, and salt. Pur\u00e9e until smooth then pour into a large saucepan. Add\ncanned tomatoes with juices and warm, covered, over low heat.<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp; In a skillet,\nsaute sliced red onion in olive oil until lightly browned, about 3-5 minutes.\nTurn off heat, and stir in arugula to wilt. Add onions and greens to\nsweet-potato-tomato sauce. Pour over cooked pasta.<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp; Serve warm topped\nwith&nbsp;red pepper flakes, chopped fresh basil,\nsliced almonds, or chopped walnuts\/pecans.&nbsp;<\/p>\n\n\n\n<p>To make sweet potatoes: Thoroughly wash 1 medium sweet\npotato, pierce with a fork 4-5 times, and place on a microwave-safe plate.\nMicrowave on high for 4 to 5 minutes until soft. If needed, heat 1 minute more\nat a time until tender.<\/p>\n\n\n\n<p>To make roasted garlic:&nbsp;Roasted Garlic can be made a\nday or two in advance and stored in the fridge.&nbsp;Preheat oven to 400. Slice\n1\/4 to 1\/2 inch from the top of the cloves and peel any loose papery outer\nlayers from the bulb. Place bulb in a piece of foil. Drizzle with olive oil and\nseason, if desired with salt and pepper. Add a few Tablespoons of water to the\nbottom of the foil, so garlic will stem. Tightly close foil and bake (on a pan\nor in a oven-safe dish) for 45-60 minutes until cloves are lightly\nbrowned.&nbsp; Allow to cool before attempting to handle.
