In the 1800\u2019s many people who immigrated to the US were accustomed\nto eating unpolished rice as a staple food. Unfortunately, only white rice was\npopularly for sale in the US. There began to be many Vitamin B-deficiency\ndiseases seen in the immigrant population, as they had previously obtained\ntheir Vitamin Bs from unpolished, \u201cwhole grain\u201d rice. The US government\nmandated that all polished rice be fortified with the nutrients that had been\nremoved. This was accomplished by saving the rice \u201cshells,\u201d crushing them into a\npowder, mixing the powder with water and spraying the mixture back onto the\nrice. The rice was allowed to dry, and the nutrients were partially restored.
