The oven-roasted veggies and beans\nadd nutrition while the buffalo sauce and spices make it taste like your\ntraditional game time favorite. The recipe makes enough to share with the\nfamily, or warm it up as leftovers for the entire weekend!<\/p>\n\n\n\n<p>1 head cauliflower, chopped to\nmedium-size pieces<\/p>\n\n\n\n<p>1 cup roughly chopped onion<\/p>\n\n\n\n<p>2-3 cloves garlic, peeled<\/p>\n\n\n\n<p>1 Tablespoon olive oil<\/p>\n\n\n\n<p>Salt and pepper, to taste<\/p>\n\n\n\n<p>One 15-ounce can cannellini beans,\ndrained<\/p>\n\n\n\n<p>3\/4 to 1 cup vegan buffalo sauce (to\ntaste)<\/p>\n\n\n\n<p>1\/4 cup nutritional yeast<\/p>\n\n\n\n<p>1 teaspoon smoked paprika<\/p>\n\n\n\n<p>1\/2 teaspoon ground coriander<\/p>\n\n\n\n<p>1 cup vegan cheddar shreds\n(optional)<\/p>\n\n\n\n<p>1\/4 cup vegan bread crumbs\n(optional)<\/p>\n\n\n\n<p>1 scallion, green part, chopped\n(optional)<\/p>\n\n\n\n<p>1 teaspoon dried parsley flakes\n(optional)<\/p>\n\n\n\n<p>To serve, tortilla or pita chips,\ncarrot and\/or celery sticks<\/p>\n\n\n\n<p>Preheat the oven to 375 degrees.\nToss chopped cauliflower, onions, and garlic with olive oil and salt\/pepper on\na rimmed sheet pan. Bake for 25-30 minutes, until vegetables are tender and\nlightly browned.<\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp; While\nvegetables bake, add beans, buffalo sauce, nutritional yeast, paprika, and\ncoriander to a blender or food processor. Pur\u00e9e until smooth. <\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp; When\nveggies are baked, add in batches to the blender\/processor (unless it all fits\nat once) and puree until smooth. <\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp; Pour into a\ncasserole pan and if needed, stir batches together. Top as desired with vegan\ncheddar shreds and\/or bread crumbs. Bake at 375 degrees an additional ten\nminutes. Turn on the oven broiler setting and broil dip to crisp top and melt\nvegan cheese for 5 minutes. <\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp; Before\nserving, sprinkle with dried parsley flakes and chopped scallions. Serve warm\nwith tortilla or pita chips and carrot\/celery sticks.<\/p>\n\n\n\n<p><em>Cook&#8217;s\nNotes<\/em>: Want it hotter? Look for extra\nspicy buffalo sauce. This recipe was tested with Frank&#8217;s and Primal brands.\nAlternatively, add some red pepper flakes or a little sriracha to amp up the\nheat.&nbsp;Want it decadent? Serve with a side or drizzle of vegan blue cheese\ndressing.
