Pack cooked rice into an oiled\nmold, oven-proof cookie cutters, muffin tins, or individual baking cups. Place\nthe mold in an oven-safe dish with 2 inches of water, open-side up. Bake in a\nhot oven for 20 minutes or until set. Allow to cool and unmold. <\/p>\n\n\n\n<p>&nbsp;&nbsp;&nbsp;&nbsp;\nIf you\u2019d like to create rice balls, to use as hot entr\u00e9e or cold snack,\ncook a batch of short-grained, sticky\/glutinous, or sushi rice, and allow to\ncool. Select one of the blends listed here, and mix with rice. Roll and pat\nlarger balls for an entr\u00e9e, smaller balls for a snack. To heat rice balls, wrap\nin plastic wrap and microwave for several minutes on medium heat, or place in a\nsteamer and heat for a few minutes. <\/p>\n\n\n\n<p><strong>Savory:<\/strong><\/p>\n\n\n\n<p>Green bell pepper, chopped tomatoes,\nchopped parsley, and chopped walnuts<\/p>\n\n\n\n<p>Chopped parsley, breadcrumbs, and lemon\njuice<\/p>\n\n\n\n<p>Chopped green bell peppers, onions,\ncelery, pimentos, mushrooms, cayenne, and paprika<\/p>\n\n\n\n<p>Cooked wild rice, minced garlic,\nsaut\u00e9ed onions and mushrooms, and dry sherry<\/p>\n\n\n\n<p>Red bell peppers, soyrizo, paprika,\noregano, and shallots<\/p>\n\n\n\n<p>Scallions, water chestnuts or jicama,\ncilantro, and soy sauce<\/p>\n\n\n\n<p>Chopped fresh parsley, minced garlic,\ncurry powder, and olive oil<\/p>\n\n\n\n<p>Forest blend mushrooms and sherry<\/p>\n\n\n\n<p><strong>Sweet:<\/strong><\/p>\n\n\n\n<p>Pineapple and organic brown sugar or\ndate sugar<\/p>\n\n\n\n<p>Roasted chestnuts or chestnut pur\u00e9e, cinnamon, and ginger<\/p>\n\n\n\n<p>Minced dried apricots, raisins, and almonds<\/p>\n\n\n\n<p>Shredded coconut, organic brown sugar,\nnutmeg, and cloves<\/p>\n","protected":false},"excerpt":{"rendered":"<p>By Chef Nancy Berkoff, RD, EdD To mold or shape rice for an elegant or fun presentation, select short-grained rice.
