Many companies\nlike Sabra, make a wide variety of hummus flavors and are wonderful to adapt to\nhot meals such as this pasta dish.<\/p>\n\n\n\n<p>3 roma tomatoes<\/p>\n\n\n\n<p>1 large red onion<\/p>\n\n\n\n<p>5 cloves whole garlic, peeled<\/p>\n\n\n\n<p>1 Tablespoon olive oil<\/p>\n\n\n\n<p>Salt and pepper to taste<\/p>\n\n\n\n<p>16-ounce package of pasta, your favorite<\/p>\n\n\n\n<p>2 cups fresh arugula<\/p>\n\n\n\n<p>10-ounce container of hummus (I used Sabra Roasted Garlic)<\/p>\n\n\n\n<p>Juice from 1\/2 fresh lemon<\/p>\n\n\n\n<p>2 green onions, chopped<\/p>\n\n\n\n<p>Preheat the oven to 400 degrees. Line a baking sheet with\nparchment paper and set aside.<\/p>\n\n\n\n<p>Slice&nbsp;tomatoes and red onion into wedges. Toss\ntomatoes, red onions, and garlic in olive oil and salt\/pepper, then spread into\na single layer on the prepared baking sheet. Bake at 400&nbsp;degrees for 30-40\nminutes, until veggies are roasted and slightly browned.<\/p>\n\n\n\n<p>When about ten minutes remain on the timer for the veggies,\nprepare pasta according to box directions. Drain and toss&nbsp;with arugula and\nall the hummus in a large serving bowl. As soon as veggies are done, fold\ngently into the hummus.
