Here are two quick-and-easy recipes\nyou can prepare at home.<\/p>\n\n\n\n<p><strong>Saut\u00e9ed Collards and\nTomatoes<\/strong> (from <em>Simply Vegan<\/em>, by Debra Wasserman)<\/p>\n\n\n\n<p>(Serves 4)<\/p>\n\n\n\n<p>1 teaspoon oil<\/p>\n\n\n\n<p>1 pound collards, rinsed and\nchopped into bite-size pieces<\/p>\n\n\n\n<p>2 ripe tomatoes, chopped<\/p>\n\n\n\n<p>2 teaspoons lemon juice<\/p>\n\n\n\n<p>\u00bd teaspoon garlic powder<\/p>\n\n\n\n<p>\u00bc teaspoon mustard powder<\/p>\n\n\n\n<p>Saut\u00e9 all the ingredients together over medium-high heat for 3-5 minutes\n(until greens are tender). Serve hot.<\/p>\n\n\n\n<p><strong>Bulgur, Corn, and Greens<\/strong>\n(from <em>Conveniently Vegan<\/em>, by Debra Wasserman)<\/p>\n\n\n\n<p>(Serves 4)<\/p>\n\n\n\n<p>1 cup bulgur (cracked wheat)<\/p>\n\n\n\n<p>2 cups water<\/p>\n\n\n\n<p>10-ounce box frozen corn kernels<\/p>\n\n\n\n<p>\u00bd pound greens (kale or collards),\nrinsed and chopped into bite-size pieces<\/p>\n\n\n\n<p>\u00bd teaspoon cumin<\/p>\n\n\n\n<p>2 Tablespoons lemon juice<\/p>\n\n\n\n<p>Cook bulgur in water in a large covered pot for 10 minutes over medium heat.\nAdd remaining ingredients. Heat 10 minutes longer, stirring occasionally.
