{"id":17618,"date":"2021-07-01T09:00:09","date_gmt":"2021-07-01T13:00:09","guid":{"rendered":"https:\/\/www.vrg.org\/blog\/?p=17618"},"modified":"2021-06-16T09:35:28","modified_gmt":"2021-06-16T13:35:28","slug":"poha-flattened-rice-indian-breakfast","status":"publish","type":"post","link":"https:\/\/www.vrg.org\/blog\/2021\/07\/01\/poha-flattened-rice-indian-breakfast\/","title":{"rendered":"Poha (Flattened Rice): Indian Breakfast"},"content":{"rendered":"\n<figure class=\"wp-block-image is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.vrg.org\/blog\/wp-content\/uploads\/2021\/06\/Poha-300x225.jpg\" alt=\"\" class=\"wp-image-17619\" width=\"225\" height=\"300\"\/><\/figure>\n\n\n\n<p><strong>By Shantika Bhat, VRG Intern<\/strong><\/p>\n\n\n\n<p><strong>(5 servings)<\/strong><strong><\/strong><\/p>\n\n\n\n<p><strong>3-1\/2 cups poha (medium to thick poha,\nwhich can be found in Indian or Asian markets)<\/strong><\/p>\n\n\n\n<p><strong>4 Tablespoons coconut oil<\/strong><\/p>\n\n\n\n<p><strong>6 Tablespoons peanuts<\/strong><\/p>\n\n\n\n<p><strong>2 teaspoons mustard seeds <\/strong><\/p>\n\n\n\n<p><strong>2 teaspoons cumin seeds <\/strong><\/p>\n\n\n\n<p><strong>2 chopped red chili <\/strong><\/p>\n\n\n\n<p><strong>3 curry leaves chopped<\/strong><\/p>\n\n\n\n<p><strong>3 pinches hing (asafoetida) <\/strong><\/p>\n\n\n\n<p><strong>1-1\/2 medium-sized onions, chopped<\/strong><\/p>\n\n\n\n<p><strong>1 cup chopped green bell pepper<\/strong><\/p>\n\n\n\n<p><strong>2 cups chopped carrots <\/strong><\/p>\n\n\n\n<p><strong>2 Tablespoons of turmeric <\/strong><\/p>\n\n\n\n<p><strong>Salt to taste<\/strong><\/p>\n\n\n\n<p><strong>Lemon juice to taste<\/strong><\/p>\n\n\n\n<p><strong>Chopped coriander leaves, for\ngarnish<\/strong><\/p>\n\n\n\n<p>In a\nlarge pot clean the poha and be careful not to rinse it too much as it can get\nsoggy and mushy. In a separate pot add 1 Tablespoon of coconut oil and then add\npeanuts and fry over medium heat until golden brown. Take out the peanuts and\nput them aside. In the same pot add 3 more Tablespoons of coconut oil and wait\nfor 2 minutes. Add mustard seeds and cumin seeds and stir for 1 minute. Next,\nadd red chili, curry leaves, hing, and onions and fry for 2 minutes. Add green\nbell pepper and carrots and stir for 3 more minutes. Add turmeric and mix for 1\nminute. Add the soft poha and peanuts and integrate everything.
