Ruby Tuesday does not list the ingredients, and I have been\nhaving trouble getting ingredient information from them&#8230;Could you check to\nsee that the Brioche Bun does not contain any eggs or animal rennet? Thanks in\nadvance for your help.\u201d<\/p>\n\n\n\n<p>In\nJuly 2021, this is how The VRG responded.<\/p>\n\n\n\n<p>As\nfar as the bun, we used Ruby&#8217;s <a href=\"https:\/\/ruby-tuesday.widget.eagle.bigzpoon.com\/home\" target=\"_blank\" rel=\"noreferrer noopener\">tool<\/a>\non their website. First, I randomly picked a store.<\/p>\n\n\n\n<p>Then\nafter clicking \u201cGo,\u201d on the dropdown menu titled <em>Set Your Preferences <\/em>that\nappeared, we chose \u201cFood Allergy or Restrictions?\u201d From the displayed icons, we\nselected two restrictions: &#8220;no egg, no milk.&#8221; That generated <a href=\"https:\/\/ruby-tuesday.widget.eagle.bigzpoon.com\/menus\" target=\"_blank\" rel=\"noreferrer noopener\">menu options by category<\/a> <em>without<\/em> egg or milk. (You could <strong>un<\/strong>restrict\none or both of them if you wanted, but you&#8217;d get many more items.)<\/p>\n\n\n\n<p>Since\nI included both as restrictions, we can also get a better idea (although not\nconclusive) on the bun&#8217;s vegan status.<\/p>\n\n\n\n<p>When\nyou click on &#8220;<a href=\"https:\/\/ruby-tuesday.widget.eagle.bigzpoon.com\/menu\/5ffa0ac1989c6b00107e655e\/Brioche%20Bun%20(Buttered)\/12656\" target=\"_blank\" rel=\"noreferrer noopener\">Breads and Buns<\/a>&#8221; you&#8217;ll see the brioche bun. Note that there&#8217;s\none on the left referred to as \u201cButtered\u201d although it&#8217;s clarified below the\nname to be \u201cbuttered with liquid margarine.\u201d The second listing on the right is\nfor a plain bun. <\/p>\n\n\n\n<p>Click on the little &#8220;i&#8221; to the right of\n&#8220;Brioche Bun,&#8221; (to the far right on the screen), and you&#8217;ll see the\ningredients:<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<p>Brioche Bun (unbuttered) [Unbleached Enriched Flour\n(Wheat Flour, Malted Barley Flour, Niacin, Reduced Iron, Thiamin Mononitrate,\nRiboflavin, Folic Acid), Water, Sugar, Margarine (Soybean Oil, Hydrogenated\nSoybean Oil, Water, Salt, Mono- and Diglycerides (plant), Artificial Flavor,\nColored with Annatto, Calcium Disodium EDTA [Preservative], Vitamin A Palmitate\nAdded), Yeast, Contains 2% or less of each of the following: Wheat Gluten,\nSalt, Yellow Corn Flour, Malted Barley Flour, Dextrose, Calcium Sulfate, Dough\nConditioners (Contains one or more of the following: Sodium Stearoyl Lactylate,\nCalcium Stearoyl Lactylate (plant), Monoglycerides (plant), Mono- And\nDiglycerides (plant), Distilled Monoglycerides (plant), Calcium Peroxide,\nCalcium Iodate, DATEM, Ethoxylated Mono- and Diglycerides (plant), Enzymes,\nAscorbic Acid), Colored With Annatto Extract, and Turmeric Oleoresin, Glaze\n(Water, Sunflower Oil, Vegetable Proteins, Wheat Maltodextrins, Wheat Dextrose,\nCorn Starch), Calcium Propionate (To Retard Spoilage) ], Liquid Margarine [Beta\nCarotene, Calcium Disodium EDTA, Citric Acid, Liquid Soybean Oil, Natural &amp;\nArtificial Flavors, Partially Hydrogenated Soybean Oil, Salt, Sodium Benzoate,\nSoy Lecithin, Vegetable Mono &amp; Diglycerades, Vitamin A Palmitate, Water ] <\/p>\n\n\n\n<p>This\nstatement is very good in that it identifies many plant sources in cases where\nit could be different (like an animal source). Not many statements from other\nchains do this.<\/p>\n\n\n\n<p>Vegans\nshould note that the natural flavors in the liquid margarine are likely dairy\n(not specified). You&#8217;d have to inquire with the company if you wanted to know\nfor sure.<\/p>\n\n\n\n<p>To check if Ruby Tuesday called the bun \u201cvegan,\u201d and get more indirect information about the natural flavors, we reset the tool and tried again. This time we entered no restrictions. However, under the drop-down menu \u201cSelect Lifestyle Options,\u201d we chose \u201cvegan.\u201d<\/p>\n\n\n\n<p>The\nVRG also checked the tiny box next to the statement: \u201cShow me only what I can\neat.\u201d<\/p>\n\n\n\n<p>This\ntime, <strong>no<\/strong> breads and buns were listed as vegan options. <\/p>\n\n\n\n<p>Incidentally,\nrestricting milk and eggs <em>and<\/em> selecting <em>vegan<\/em> also showed no\nbreads and buns that fit that category.<\/p>\n\n\n\n<p>Even\nthough the liquid margarine used for buttering contains natural flavors which\nare probably dairy-derived while the bun itself does not contain them, and the\nplain bun isn&#8217;t buttered, the plain bun still wasn&#8217;t listed as \u201cvegan\u201d when we\nused the website tool. <\/p>\n\n\n\n<p>The\nartificial flavor in the plain bun&#8217;s <em>margarine<\/em> (as a bun ingredient; see\nstatement above) is probably not dairy-derived but it could be. It is most\nlikely synthetic and derived from petroleum-derived ingredients. Because of the\nrange of possibilities regarding artificial butter flavor, The VRG is unable to\nsay definitively, based on the tool and ingredient statement, whether the plain\nBrioche bun is vegan.<\/p>\n\n\n\n<p>The\nenzymes listed in the bun are likely plant-based or microbial fermentation\nproducts.
