{"id":18352,"date":"2021-11-22T10:00:31","date_gmt":"2021-11-22T15:00:31","guid":{"rendered":"https:\/\/www.vrg.org\/blog\/?p=18352"},"modified":"2021-11-03T11:14:55","modified_gmt":"2021-11-03T15:14:55","slug":"lentil-loaf-or-burgers","status":"publish","type":"post","link":"https:\/\/www.vrg.org\/blog\/2021\/11\/22\/lentil-loaf-or-burgers\/","title":{"rendered":"Lentil Loaf or Burgers"},"content":{"rendered":"\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"300\" height=\"273\" src=\"https:\/\/www.vrg.org\/blog\/wp-content\/uploads\/2021\/11\/Lentil-Burger-by-Rissa-Miller-300x273.jpg\" alt=\"\" class=\"wp-image-18353\" srcset=\"https:\/\/www.vrg.org\/blog\/wp-content\/uploads\/2021\/11\/Lentil-Burger-by-Rissa-Miller-300x273.jpg 300w, https:\/\/www.vrg.org\/blog\/wp-content\/uploads\/2021\/11\/Lentil-Burger-by-Rissa-Miller.jpg 600w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><figcaption>Photo by Rissa Miller<\/figcaption><\/figure>\n\n\n\n<p>By Rissa Miller, Senior Editor <em>Vegetarian Journal<\/em><\/p>\n\n\n\n<p>This recipe just tastes like fall and the holiday season!\nAnd the burgers are a fast, easy way to make a meal festive.<\/p>\n\n\n\n<p>2-1\/2 cups yellow or brown lentils<\/p>\n\n\n\n<p>1 bay leaf<\/p>\n\n\n\n<p>5 cups water or veggie broth<\/p>\n\n\n\n<p>1 teaspoon olive oil&nbsp;<\/p>\n\n\n\n<p>1 cup chopped onion<\/p>\n\n\n\n<p>1\/2 cup chopped celery<\/p>\n\n\n\n<p>1\/2 cup chopped mushrooms<\/p>\n\n\n\n<p>1 cup cooked rice<\/p>\n\n\n\n<p>2-4 cloves garlic, minced<\/p>\n\n\n\n<p>1 Tablespoon nutritional yeast<\/p>\n\n\n\n<p>1 Tablespoon low-sodium soy sauce or tamari<\/p>\n\n\n\n<p>1 teaspoon dried parsley<\/p>\n\n\n\n<p>1\/2 teaspoon dried thyme<\/p>\n\n\n\n<p>1\/2 teaspoon dried sage<\/p>\n\n\n\n<p>1\/2 teaspoon dried rosemary<\/p>\n\n\n\n<p>pinch black pepper<\/p>\n\n\n\n<p>1\/4 cup flaxseed meal<\/p>\n\n\n\n<p>Non-stick spray<br>\n1\/2 cup ketchup (if making a loaf)<\/p>\n\n\n\n<p>In a large pot, combine lentils, bay leaf,&nbsp;and water or\nbroth. Bring to a boil, then lower to a simmer and cover. Cook, stirring\noccasionally until all liquid is absorbed and lentils are soft, about 40 minutes.<\/p>\n\n\n\n<p>Meanwhile, warm olive oil in a saut\u00e9 pan and add onion,\ncelery, and mushrooms. Saut\u00e9 until veggies are soft and lightly browned, about\n7-8 minutes.&nbsp;<\/p>\n\n\n\n<p>Add cooked rice to a microwave-safe bowl and stir together\ncooked rice, minced garlic, nutritional yeast, soy sauce, parsley, thyme, sage,\nrosemary, and black pepper. In a microwave, warm on high heat for about 45\nseconds, then stir in the flaxseed meal. Allow to rest for 15 minutes for\nflaxseed to bind.<\/p>\n\n\n\n<p>Preheat the oven to 350 degrees. When lentils are done, add\nto a food processor or high-power blender and process into a pur\u00e9e. If\nnecessary, process in batches. Add smoothed lentil paste to rice mixture and\nsaut\u00e9ed vegetables and mix by hand until well combined.<\/p>\n\n\n\n<p>Shape to bake. If making burgers, line a cookie sheet with\nparchment paper and form the mixture into 15 patties. Bake burgers for 15\nminutes and flip, then bake another 15 minutes on opposing side. Cool for 20\nminutes before serving. Bake\nloaf for 50-60 minutes and then cool 1 hour before inverting to serve.
