It&#8217;s elegant enough to dress up with a glass of wine, and\naccessible enough to eat on the sofa with a movie.<\/p>\n\n\n\n<p>Roasted Garlic:<\/p>\n\n\n\n<p>1 head fresh garlic<\/p>\n\n\n\n<p>1\/2 teaspoon olive oil<\/p>\n\n\n\n<p>Salt and pepper, optional, to taste<\/p>\n\n\n\n<p>1\/4 cup water<\/p>\n\n\n\n<p>Preheat the oven to 375 degrees. Carefully&nbsp;slice off\nthe top of the garlic head, leaving most of the papery skin intact. Rub cut top\nwith olive oil and sprinkle&nbsp;with salt\/pepper if using. Create a &#8220;bowl&#8221;\nwith a sheet of aluminum&nbsp;foil to cradle the garlic and fill the bottom of\nthe foil with water. Fold the top closed to seal in the garlic. Place packet in\na small oven-safe baking dish and roast for 45-50 minutes, until the garlic is\nsoftened, browned, and caramelized. Allow to cool before handling. This can\nalso be made a day ahead and stored in the fridge.<\/p>\n\n\n\n<p><em>White Bean Pizza\nSpread:<\/em><\/p>\n\n\n\n<p>1 head pre-roasted garlic, cooled<\/p>\n\n\n\n<p>1-1\/2 cups cooked white beans, rinsed\/drained<\/p>\n\n\n\n<p>1\/2 cup fresh parsley<\/p>\n\n\n\n<p>1\/3 cup plain, unsweetened&nbsp;vegan yogurt<\/p>\n\n\n\n<p>juice from 1 lemon<\/p>\n\n\n\n<p>1 teaspoon olive oil or water<\/p>\n\n\n\n<p>1 teaspoon ground rosemary<\/p>\n\n\n\n<p>1 teaspoon cumin<\/p>\n\n\n\n<p>Pinch red pepper flakes, optional, to taste<\/p>\n\n\n\n<p>Salt and pepper, optional, to taste<\/p>\n\n\n\n<p>1 large vegan pizza crust, your favorite (can be wheat or\ngluten-free, as desired)<\/p>\n\n\n\n<p>Preheat the oven to 400 degrees. Squeeze soft roasted garlic\ncloves from paper skins into a high-power blender or food processor&nbsp;and\nadd all ingredients except pizza crust. Process on medium to high until smooth\nand silky. Evenly top the pizza crust with a layer of the White Bean Pizza\nSpread.&nbsp;<\/p>\n\n\n\n<p>Select 4-5 items from the Pizza Toppings list below and\nspread evening over the pizza, arranging as artfully as desired. Follow crust\ndirections, if applicable, regarding whether or not to use a baking sheet for\ncrust; brands vary. Bake pizza for about 8-10 minutes, until crust is cooked\nthrough and crisp, and veggies are soft and slightly browned.&nbsp;<\/p>\n\n\n\n<p>If desired, add 1-2 items from the Finishing Tastes list\nbelow. This step is optional, but gives the pizza an elevated complexity, for\nthose who enjoy that kind of flavor.<\/p>\n\n\n\n<p>Cut into slices and serve immediately.<\/p>\n\n\n\n<p><em>Pizza Toppings, about\n1\/2 cup of each if using 4-5 items per pizza:<\/em><\/p>\n\n\n\n<p>slivered carrots<\/p>\n\n\n\n<p>sliced red onions<\/p>\n\n\n\n<p>zucchini or yellow squash slices<\/p>\n\n\n\n<p>roasted red peppers<\/p>\n\n\n\n<p>chopped mushrooms<\/p>\n\n\n\n<p>quartered artichoke hearts<\/p>\n\n\n\n<p>sliced sun-dried tomatoes or halved&nbsp;cherry tomatoes<\/p>\n\n\n\n<p>chopped broccolini<\/p>\n\n\n\n<p>fennel half-moons<\/p>\n\n\n\n<p>fresh arugula<\/p>\n\n\n\n<p>trimmed winter squash slices<\/p>\n\n\n\n<p><em>Finishing Tastes,\nabout 1 Tablespoon each if using 1-2 items per pizza:<\/em><\/p>\n\n\n\n<p>a drizzle of balsamic vinegar<\/p>\n\n\n\n<p>lemon juice<\/p>\n\n\n\n<p>sunflower seeds<\/p>\n\n\n\n<p>slivered fresh basil<br>\nchopped fresh dill<\/p>\n\n\n\n<p>sliced olives<\/p>\n\n\n\n<p>dried cranberries<\/p>\n\n\n\n<p>chickpeas or black beans<\/p>\n","protected":false},"excerpt":{"rendered":"<p>By Rissa Miller This pizza&nbsp;topped with loads of veggies, is highly customizable, and great for a couple, family, or friends to celebrate Valentine\u2019s Day.
