Line a baking sheet with\nparchment paper or aluminum foil. If using foil, spray lightly with non-stick\nspray.<\/p>\n\n\n\n<p>In a small bowl, combine Mexican seasoning, cumin, oregano,\nand smoked paprika. Add minced garlic.<\/p>\n\n\n\n<p>Spread cauliflower&nbsp;and sliced onion on the prepared\nbaking sheet and lightly spray with non-stick cooking spray. Sprinkle the\nseasoning-garlic mixture on the vegetables and massage&nbsp;to\nthoroughly&nbsp;coat.<\/p>\n\n\n\n<p>Bake about 20 minutes, stirring&nbsp;once about half way\nthrough cooking time. Allow to cool until you can comfortably touch it and\ntransfer to a cutting board.
