Enjoy!<\/i><\/p>\n<p><strong>Japanese Eggplant<\/strong><\/p>\n<p>2 cups Japanese Eggplant, large diced<br \/>\n1 cup mirin<br \/>\n8 oz Mochiko (Rice Flour)<br \/>\nOil for frying<\/p>\n<p>Dredge the eggplant in the rice flour and meanwhile begin simmering the mirin in a small shallow pot or saut\u00e9 pan, you want the mirin to form a syrup-like consistency before you fry the eggplant.
