You can read his entire article here: <a href=\"https:\/\/www.vrg.org\/journal\/vj2023issue2\/2023_issue2_foraged_foods.php\">https:\/\/www.vrg.org\/journal\/vj2023issue2\/2023_issue2_foraged_foods.php<\/a><\/p>\n<p><strong>Dandelion Colombo<\/strong><br \/>\n(Serves 6)<\/p>\n<p>1 Tablespoon oil<br \/>\n1 medium cauliflower, sliced<br \/>\n6 cloves of garlic, chopped<br \/>\n2 small hot chili peppers, seeds and ribs removed, and finely chopped, or to taste<br \/>\n6 cups dandelion leaves, arugula, or other bitter greens, rinsed, drained, and chopped<br \/>\n1 teaspoon ground coriander<br \/>\n1 teaspoon turmeric<br \/>\n1\/2 teaspoon ground yellow mustard seed<br \/>\nPinch ground allspice<br \/>\n1 cup lite coconut milk<br \/>\n1\/2 cup firm silken tofu, drained<br \/>\n1\/2 cup water<br \/>\n1-1\/2 Tablespoons miso<\/p>\n<p>In a large pot, heat oil and saut\u00e9 cauliflower, garlic, and peppers about 5 minutes. Add chopped greens. Meanwhile, pur\u00e9e all remaining ingredients in a blender.<\/p>\n<p>Mix the pur\u00e9e with the saut\u00e9ed ingredients, bring to a boil, reduce the heat to low, cover, and cook another 6-10 minutes, or until the cauliflower is tender.
