{"id":2561,"date":"2012-01-16T09:00:11","date_gmt":"2012-01-16T14:00:11","guid":{"rendered":"http:\/\/www.vrg.org\/blog\/?p=2561"},"modified":"2012-01-11T14:13:47","modified_gmt":"2012-01-11T19:13:47","slug":"vegan-recipes-for-chinese-new-year","status":"publish","type":"post","link":"https:\/\/www.vrg.org\/blog\/2012\/01\/16\/vegan-recipes-for-chinese-new-year\/","title":{"rendered":"Vegan Recipes for Chinese New Year!"},"content":{"rendered":"<p>Chinese New Year is on January 23rd, and what better way to celebrate than with some delicious vegan recipes from VRG&#8217;s books, <a href=\"http:\/\/www.vrg.org\/catalog\/index.php?main_page=product_info&#038;cPath=1&#038;products_id=1\">Simply Vegan<\/a>, <a href=\"http:\/\/www.vrg.org\/catalog\/index.php?main_page=product_info&#038;cPath=1&#038;products_id=63\">Vegans Know How to Party<\/a>, and <a href=\"http:\/\/www.vrg.org\/catalog\/index.php?main_page=product_info&#038;cPath=1&#038;products_id=2\">Meatless Meals for Working People<\/a>!  <\/p>\n<h3>Broccoli Chow Mein<\/h3>\n<p>Serves 3<\/p>\n<p>From <a href=\"http:\/\/www.vrg.org\/catalog\/index.php?main_page=product_info&#038;cPath=1&#038;products_id=1\">Simply Vegan<\/a><br \/>\nBy Debra Wasserman and Reed Mangels, PhD, RD<\/p>\n<p>3 stalks broccoli, chopped<br \/>\n1 Tablespoon oil<br \/>\n&frac12; cup water<br \/>\n&frac12; pound mung bean sprouts<br \/>\n&frac12; cup slivered almonds or sunflower seeds (optional)<br \/>\n1 Tablespoon arrowroot starch or cornstarch<br \/>\n&frac12; cup water<br \/>\n1-&frac12; Tablespoons tamari or soy sauce<br \/>\n1 teaspoon sesame oil (optional)<\/p>\n<p>Stir-fry broccoli in oil and &frac12; cup water for 3 minutes over medium-high heat. Add bean sprouts and almonds or seeds. Stir-fry for 2 more minutes.<\/p>\n<p>Dissolve starch in &frac12; cup water. Add to broccoli and sprout mixture along with tamari or soy sauce and sesame oil if desired. Stir, then heat covered for 1 minute longer. Serve hot.<\/p>\n<h3>Moo Shu Tempeh<\/h3>\n<p>Serves 8<\/p>\n<p>From <a href=\"http:\/\/www.vrg.org\/catalog\/index.php?main_page=product_info&#038;cPath=1&#038;products_id=63\">Vegans Know How to Party<\/a><br \/>\nBy Nancy Berkoff, EdD, RD<\/p>\n<p>Marinade:<br \/>\n4 Tablespoons low-sodium soy sauce<br \/>\n4 Tablespoons cold water<br \/>\n2 Tablespoons dark sesame oil<br \/>\n2 teaspoons orange juice concentrate<br \/>\n3 cloves garlic, minced<\/p>\n<p>Combine all marinade ingredients in a large glass or plastic bowl. Set aside.<\/p>\n<p>Tempeh:<br \/>\n2 Tablespoons dried mushrooms (shiitake are a good variety)<br \/>\n1 cup warm water<br \/>\n1&frac12; pounds tempeh, cut into thin strips<br \/>\nVegetable oil spray<br \/>\n4 cups finely shredded green cabbage<br \/>\n1 cup finely shredded carrots<br \/>\n1 cup diced green onions (white and green parts)<br \/>\n2 Tablespoons cornstarch<br \/>\n&frac12; cup warm water<br \/>\n8 flour tortillas<\/p>\n<p>Combine mushrooms and 1 cup warm water in a small bowl. Allow them to soak for 15 minutes or until soft. Discard water. Cut mushrooms into thin strips. Set aside.<\/p>\n<p>Add tempeh to marinade, cover, and marinate for 30 minutes. Drain tempeh, reserve remaining marinade to use as sauce.<\/p>\n<p>Spray a large skillet with oil and allow to heat. Add tempeh and allow to brown, about 3 minutes. Stir in mushrooms, cabbage, carrots, and green onions. Quickly mix cornstarch with &frac12; cup warm water and add to tempeh mixture. Stir and cook over high heat until cabbage is tender and mixture is hot. Remove from stove.<\/p>\n<p>To serve, warm tortillas in the microwave or oven, rolled, and wrapped in a towel. Place tortillas flat on a serving platter or on individual plates. Spoon a small amount, about 1 teaspoon marinade in the center of each tortilla. Top marinade with &frac14; cup tempeh mixture. Fold bottom edge over tempeh mixture. Fold left and right sides of tortilla to the center to form a loose roll. Serve hot.<\/p>\n<h3>Fried Rice with Peanuts or Almonds<\/h3>\n<p>Serves 6<\/p>\n<p>From <a href=\"http:\/\/www.vrg.org\/catalog\/index.php?main_page=product_info&#038;cPath=1&#038;products_id=2\">Meatless Meals for Working People<\/a><br \/>\nBy Debra Wasserman and Charles Stahler<\/p>\n<p>1 large onion chopped<br \/>\n1 Tablespoon oil<br \/>\n2 cups pre-cooked rice (leftovers are good)<br \/>\n1 large green pepper, chopped<br \/>\n1 stalk celery, chopped<br \/>\n1 cup mushrooms, sliced<br \/>\n1 small zucchini, chopped<br \/>\n2 Tablespoons soy sauce or tamari<br \/>\n1 cup roasted peanuts or almonds, chopped or whole<\/p>\n<p>Saut&eacute; onion in oil in a large frying pan or wok over a medium heat for 3 minutes.
