Hope attends Scripps College, which is part of the Claremont Colleges, a five school consortium. She secured a complete plant-based menu at her college\u2019s annual sustainability summit and organized a\u00a0panel at Stanford\u2019s Food4Thought Conference addressing issues about seafood. Drawing on academic research and her experience as a vegetarian collegiate cross country athlete, she led a teach-in, including a cooking demo, for student athletes concerning a plant-based diet.\u00a0Hope is planning future workshops with registered dietitians to ensure that students have accurate information concerning vegan diets. A reference said, \u201cI am very lucky to work with someone as driven as she is.\u201d<\/span><\/p>\n
