Here are two recipes to get you started.<\/p>\n<p><strong>Hearty Macaroni Dinner<\/strong> (from Simply Vegan)<br \/>\nServes 4<\/p>\n<p>2 cups elbow macaroni<br \/>\n4 cups water<br \/>\n1 onion, chopped<br \/>\n2 Tablespoons oil<br \/>\n3 cups no salt added tomato juice<br \/>\n4 teaspoons chili powder<br \/>\nSalt and pepper to taste<br \/>\n10 ounces frozen corn<br \/>\n19-ounce can kidney beans, drained (or 2 cups cooked kidney beans)<\/p>\n<p>Cook pasta in water until tender. Drain.<\/p>\n<p>Saut\u00e9 onion in oil in a large pot. Add remaining ingredients, as well as cooked pasta. Simmer 15 minutes, stirring occasionally. Serve hot.<\/p>\n<p><strong>Tofu Burgers <\/strong>(from Meatless Meals for Working People)<br \/>\nServes 4<\/p>\n<p>2 cups firm tofu, crumbled<br \/>\n2 teaspoons garlic powder<br \/>\n1 cup wheat germ<br \/>\n2 teaspoons soy sauce or tamari<br \/>\n1 teaspoon pepper<br \/>\n\u00bd cup finely chopped fresh parsley<br \/>\n1 Tablespoon oil<br \/>\n\u00bd cup water or vegetable broth<br \/>\n2 teaspoons oil for frying<\/p>\n<p>Blend or mash tofu well and add remaining ingredients (except oil for frying). The easiest way to do this is in a food processor, but you can do it by hand. Mix well.<\/p>\n<p>Form patties and fry in oil in a large frying pan on both sides until brown (approximately 10 minutes). <\/p>\n<p>Serve warm on whole grain bread with lettuce and sliced tomato.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Celebrate the father\u2019s in your life this Father\u2019s Day by serving vegan dishes!
