Serve in a small glasses, as this is very rich.<\/p>\n<p><strong>Pumpkin Bread<\/strong> (from <a href=\"http:\/\/www.vrg.org\/bookstore\/index.php?main_page=product_info&#038;cPath=1&#038;products_id=5\">Vegan Microwave Cookbook<\/a>, by Chef Nancy Berkoff, RD)<br \/>\nMakes 9&#215;5-inch or 8&#215;4-inch loaf pan, or about 10 slices<\/p>\n<p>1 cup all-purpose flour<br \/>\n\u00be cup organic sugar<br \/>\n1 teaspoon baking powder<br \/>\n1 teaspoon baking soda<br \/>\n1 teaspoon cinnamon<br \/>\n1 teaspoon ginger powder<br \/>\n\u00bd teaspoon nutmeg<br \/>\n\u00bc teaspoon clove powder<br \/>\n\u00bd cup oil<br \/>\n4 Tablespoons silken tofu<br \/>\n\u00bd cup chopped walnuts, almonds, or mixed nuts (optional)<br \/>\n1 cup canned pumpkin (unsweetened)<br \/>\nVegetable oil spray<\/p>\n<p>In a medium-size mixing bowl, mix all the ingredients (except oil spray) until well combined.<\/p>\n<p>Spray a 9&#215;5-inch of 8&#215;4-inch loaf pan with vegetable oil. Spread batter evenly in the pan. Place an inverted shallow bowl or saucer in the center of the microwave or use a microwave baking rack. Place the loaf pan on the bowl or rack. Microwave on MEDIUM for 9 minutes. Rotate and microwave on HIGH for 2-5 minutes. Check for readiness with a toothpick inserted in the center.<\/p>\n<p>Note: If possible, use a loaf pan with straight, rather than sloped sides for microwave baking.<\/p>\n<p><strong>Moroccan Couscous and Pumpkin<\/strong> (from <a href=\"http:\/\/www.vrg.org\/bookstore\/index.php?main_page=product_info&#038;cPath=1&#038;products_id=13\">The Lowfat Jewish Vegetarian Cookbook<\/a>, by Debra Wasserman)<br \/>\nServes 4<\/p>\n<p>1 pound pumpkin, seeds removed and chopped<br \/>\n1 cup water<br \/>\n1 cup couscous<br \/>\n1 small onion, minced<br \/>\n\u00bc cup slivered onions<br \/>\n\u00bc cup raisins<br \/>\n1 teaspoon cinnamon<br \/>\n\u00bd cup maple syrup<\/p>\n<p>Steam chopped pumpkin in water in a covered pot over medium heat for 5 minutes. Add remaining ingredients and simmer in covered pot for 2 minutes. Turn off heat and let covered pot sit for 3 minutes longer.
