This is a great day to encourage non-vegetarians to go meatless. Below are some vegan recipes to enjoy while celebrating Meatout Day with friends and family.<\/p>\n<p><strong>Wayne\u2019s Tofu Chili<\/strong> (From <a href=\"http:\/\/www.vrg.org\/bookstore\/index.php?main_page=product_info&#038;cPath=1&#038;products_id=1&#038;zenid=63f17ec4d946eb9b0cfb82733b79c51b\">Simply Vegan<\/a>)<br \/>\nServes 8<\/p>\n<p>1 pound tofu, cubed in small pieces<br \/>\n2 Tablespoons oil<br \/>\n2 onions, chopped<br \/>\n3 green peppers, chopped<br \/>\n28-ounce can crushed tomatoes<br \/>\n15-ounce can black-eyed peas, drained<br \/>\n15-ounce can kidney beans, drained<br \/>\n15-ounce can white beans, drained<br \/>\n2 jalape\u00f1o peppers, minced<br \/>\nGarlic and chili powder to taste<\/p>\n<p>Saut\u00e9 tofu in oil over medium heat for 10 minutes. Add chopped onions and green peppers, and stir-fry for 5 minutes longer. Lower heat. Add tomatoes, peas, beans, peppers, and spices. Simmer for 12 minutes. You can add some tomato paste if the sauce is too thin. You can also freeze the chili.<\/p>\n<p><strong>Pasta in Paradise<\/strong> (From <a href=\"http:\/\/www.vrg.org\/bookstore\/index.php?main_page=product_info&#038;cPath=1&#038;products_id=4\">Vegan Meals for One or Two<\/a>)<br \/>\nServes 2<\/p>\n<p>4 ounces uncooked vermicelli, rice noodles, or spaghetti<br \/>\n\u00bc cup red or yellow bell pepper strips (about 1 medium pepper)<br \/>\n1 cup ripe chopped papaya (about 1 small papaya)<br \/>\n1 cup ripe chopped tomatoes (about 1 medium tomato)<br \/>\n\u00bd cup ripe chopped mango (about 1 half mango)<br \/>\n2 Tablespoons chopped fresh cilantro or flat leafed parsley<br \/>\n2 teaspoons olive oil<br \/>\n\u00bc teaspoon cinnamon<br \/>\n\u00bd teaspoon white pepper<br \/>\n2 Tablespoons chopped peanuts<\/p>\n<p>Cook pasta according to package directions. Rinse, drain, and set aside to cool.<br \/>\nIn a large bowl, combine pepper, papaya, tomatoes, mango, cilantro, oil, cinnamon, and white pepper. Toss to mix. Add pasta and toss to mix. Top with peanuts before serving.<\/p>\n<p><strong><br \/>\nBlack Bean and Corn Chowder <\/strong>(From <a href=\"http:\/\/www.vrg.org\/bookstore\/index.php?main_page=product_info&#038;cPath=1&#038;products_id=11\">Conveniently Vegan<\/a>)<br \/>\nServes 6<\/p>\n<p>15-ounce can black beans, rinsed and drained<br \/>\n14-ounce can diced tomatoes or whole tomatoes, chopped<br \/>\n10-ounce box frozen corn kernels<br \/>\nSmall onion, finely chopped<br \/>\n2 cups soy milk or other milk alternative<br \/>\n4 cups water<br \/>\n\u00bc teaspoon garlic powder<br \/>\nSalt and pepper to taste<\/p>\n<p>Heat all the ingredients together in a large pot over medium heat for 25 minutes.
