Living in Florida, I wake up to 80 degree heat, with it reaching high 90&#8217;s by lunch time. I love the heat and am ready to enjoy the rest of this summer. Although I&#8217;m all for vegan chili and hot cocoa any time of year, it&#8217;s good to pair the season with awesome, appropriate foods. Here are a couple heat-friendly recipes, all good for trips to the beach, lake, camp, or wherever this summer takes you:<\/p>\n<p><strong>Cool Cucumber Salad<br \/>\n<\/strong><br \/>\n6 cucumbers<br \/>\n5 Tomatoes<br \/>\n1 onion<br \/>\nVegan Italian dressing<\/p>\n<p>Wash all of the veggies. Skin cucumber, if preferred. Cut cucumbers, tomatoes, and onion into chunks. Put all of the veggies into a bowl, and mix around with spoon. Drizzle veggies with vegan Italian dressing. Serve cold.<\/p>\n<p><strong>Watermelon Gazpacho<\/strong><\/p>\n<p>5 cups of cubed watermelon<br \/>\n1\u00bd cups of peeled and chopped cucumber<br \/>\n1\/3 cup diced red onion<br \/>\n\u00bd cup chopped celery<br \/>\n2 teaspoons cayenne pepper<br \/>\n1 Tablespoon grated jalape\u00f1o<br \/>\nJuice of one lime<br \/>\n2 Tablespoons chopped parsley<br \/>\n2 Tablespoons chopped fresh basil<\/p>\n<p>Pur\u00e9e watermelon in blender. Pour into serving bowl. Mix in other ingredients with a spoon. Serve chilled.<\/p>\n<p><strong>Spinach and Artichoke Flatbread<\/strong><\/p>\n<p>Flatbread:<br \/>\n1 cup flour<br \/>\n\u00bd cup full fat coconut milk<\/p>\n<p>Topping:<br \/>\n\u00bc cup olive oil<br \/>\n3 diced artichoke hearts<br \/>\n1 cup spinach<br \/>\nGarlic<br \/>\n2 Tablespoons balsamic vinegar<\/p>\n<p>Preheat oven to 325 degrees, Mix flatbread ingredients thoroughly. Pour about \u00bd cup of batter into a greased or non-stick frying pan and cook until the batter is fluffy. Mix topping ingredients, and sprinkle onto your flatbread. Bake flatbread for 5-10 minutes, until your flatbread is golden brown. Cut and serve.<\/p>\n<p><strong>Fruity Coconut Water<\/strong><\/p>\n<p>Can be any frozen fruit of your choice. Frozen fruit works better, because it produces more juice. I prefer a few:<\/p>\n<p>Strawberries<br \/>\nBlueberries<br \/>\nBlackberries<br \/>\nRaspberries<br \/>\n11-ounce carton coconut water<\/p>\n<p>Cut strawberries. Pour coconut water into a pitcher and mix in fruit. Serve iced.<\/p>\n<p><strong>Mexican Bean Burgers<\/strong><\/p>\n<p>1 can black beans<br \/>\n1 can pinto beans<br \/>\n\u00bd cup salsa<br \/>\n1 cup vegan bread crumbs<br \/>\n\u00bd onion, chopped<br \/>\n\u00bc cup vegetable oil or preferred frying oil.<\/p>\n<p>Optional toppings: avocado, ketchup, vegan mayonnaise, mustard, vegan cheese<\/p>\n<p>Mash beans in a bowl, mix in salsa and bread crumbs. Add onion to mixture. Form batter into patties. Fry patties in vegetable oil over medium heat. Serve on a vegan bun with preferred toppings.<\/p>\n<p><strong>Fruit Kabobs<\/strong><\/p>\n<p>Carton of strawberries<br \/>\nCantaloupe<br \/>\nKiwi<br \/>\nHoneydew<br \/>\nBananas<br \/>\nWatermelon<br \/>\nWooden skewers<\/p>\n<p>Cut as much fruit as wanted into disks measuring 1\/3-inch in height. Place in preferred pattern on wooden skewers. Serve cold.<\/p>\n<p><strong>Apple Bake<\/strong><\/p>\n<p>Filling:<br \/>\n6 large, honey crisp apples<br \/>\n\u00bc cup water<br \/>\n2 Tablespoons orange juice<br \/>\n1 Tablespoon cinnamon<br \/>\n1\u00bd teaspoons nutmeg<br \/>\n1 teaspoon ginger powder<br \/>\n2 Tablespoons maple syrup<\/p>\n<p>Topping:<br \/>\n2 cups oats<br \/>\n3 Tablespoons maple syrup<br \/>\n\u00bc cup melted vegan margarine<br \/>\n\u00bc cup sunflower seeds<br \/>\n2 teaspoons cinnamon<\/p>\n<p>Preheat oven to 350 degrees. Peel apples, if preferred, and chop into chunks. Mix water, orange juice, cinnamon, nutmeg, ginger, and 2 Tablespoons maple syrup in with the chopped apples. Place in an 8&#215;8 baking pan. Mix together topping ingredients; sprinkle evenly over filling.
