We are always looking for ways to speed up our daily tasks and make our lives easier. Many people fall victim to skipping breakfast or lunch due to lack of time. Wraps are easy to prepare and great for on the go munching. They are delicious and packed with nutrition and are easy to customize as preferred.<\/p>\n<p><strong>Spicy Hummus Wraps<\/strong><br \/>\nWhole wheat tortilla<br \/>\nLentil hummus (recipe below)<br \/>\nSpinach<br \/>\nRoasted peppers<br \/>\nSriracha sauce<br \/>\nSpicy Veganaise (recipe below)<\/p>\n<p>Lentil Hummus:<br \/>\n1 cup slightly overcooked cooked lentils (easier to blend)<br \/>\n2 Tablespoons tahini<br \/>\n1 teaspoon paprika<br \/>\n1 teaspoon cayenne pepper<br \/>\n\u00bc cup olive oil<\/p>\n<p>Blend ingredients together until smooth.<\/p>\n<p>Spicy Veganaise:<br \/>\n1\/2 cup Vegenaise(vegan mayonnaise)<br \/>\n2 Tablespoons Sriracha<br \/>\n1 teaspoon lime juice (optional)<br \/>\nMix ingredients together well.<br \/>\nSpread Lentil Hummus and Spicy Veganaise onto a tortilla, layer with spinach, peppers, and then drizzle with Sriracha sauce. Fold into wrap formation.<\/p>\n<p><strong>Avocado Chicky Salad Wraps<\/strong><br \/>\n20 large, rinsed lettuce leaves<br \/>\n2 mashed avocados<br \/>\n1 cup cooked chickpeas<br \/>\n1 cup chopped spinach<br \/>\nJuice of one lime<br \/>\n1 Tablespoon smoked paprika<br \/>\n2 teaspoons cayenne pepper<br \/>\n2 teaspoons minced garlic<br \/>\n\u00bd red onion, chopped<br \/>\nSalt to taste<\/p>\n<p>Combine and mix mashed avocado, cooked chickpeas, lime juice, red onion, smoked paprika, cayenne pepper, minced garlic, salt, and chopped spinach. Dollop mixture generously into lettuce leaves and fold avocado salad laden leaves into a wrap formation.<\/p>\n<p><strong>Green Machine Wrap<\/strong><br \/>\n3 Tablespoons guacamole<br \/>\n\u00bd cup spinach<br \/>\n\u00bc cup sprouts<br \/>\n2 Tablespoons edamame<br \/>\nSpinach tortilla<br \/>\nLayer ingredients on the tortilla as preferred.<\/p>\n<p><strong>Asian Lettuce Wrap<\/strong><br \/>\nLarge piece of lettuce<br \/>\n1 cup crumbled tofu<br \/>\n\u00bc cup chopped red pepper<br \/>\n\u2153 cup shredded carrots<br \/>\n2 teaspoons diced garlic<br \/>\n2 teaspoons sesame seeds<br \/>\n1 to 2 teaspoons ginger powder<br \/>\n\u2153 cup crushed walnuts<br \/>\n3 Tablespoons soy sauce<br \/>\n\u215b cup sesame oil<\/p>\n<p>Combine everything except for the lettuce leaves and saute on medium heat for 5 minutes, stirring constantly to prevent the tofu from sticking. Serve warm in cold, fresh lettuce leaves.<\/p>\n<p><strong>Veggie Wrap<\/strong><br \/>\nShredded carrots<br \/>\n\u00bc avocado<br \/>\nCucumber<br \/>\nHummus<br \/>\n3 Tablespoons cooked quinoa<br \/>\nSpinach or shredded kale<br \/>\nWhole grain tortilla<\/p>\n<p>Layer your wrap with however much of each ingredient you prefer, starting with the tortilla as a base, then the hummus.<\/p>\n<p><em>Lily is a long-distance Vegetarian Resource Group intern.
