{"id":7726,"date":"2015-08-04T14:52:00","date_gmt":"2015-08-04T18:52:00","guid":{"rendered":"http:\/\/www.vrg.org\/blog\/?p=7726"},"modified":"2015-08-04T14:55:39","modified_gmt":"2015-08-04T18:55:39","slug":"switch-up-your-salads","status":"publish","type":"post","link":"https:\/\/www.vrg.org\/blog\/2015\/08\/04\/switch-up-your-salads\/","title":{"rendered":"Switch Up Your Salads"},"content":{"rendered":"<p>By Lily Donofrio<\/p>\n<p>Note: Each recipe yields 2 servings<\/p>\n<p><strong>Chickpea Salad<\/strong><\/p>\n<p>Mix these Chickpea Salad ingredients together in a bowl:<\/p>\n<p>1 cup cooked chickpeas<br \/>\n\u00bc cup Vegenaise or other vegan mayo<br \/>\nJuice of \u00bd lemon<br \/>\n1 Tablespoon  smoked paprika<br \/>\n\u00bd Tablespoon chili powder<br \/>\n2 Tablespoons diced onion<\/p>\n<p>Add the following to the prepared Chickpea Salad and toss together:<\/p>\n<p>2 cups Romaine lettuce<br \/>\n\u00bd cup shredded carrots<br \/>\n\u00bd cup fresh corn kernels<br \/>\n\u215b cup chopped green onion<br \/>\n\u00bd cup sliced tomato<br \/>\n1 cup chickpea salad (recipe below)<br \/>\n1 sliced avocado<\/p>\n<p>Suggested dressing: olive oil and balsamic vinegar<\/p>\n<p><strong>Green Salad<\/strong><\/p>\n<p>2 cups chopped fresh kale and\/or spinach<br \/>\n\u00bd cup Edamame<br \/>\n1 sliced avocado<br \/>\n\u215b cup chopped green onion<br \/>\n\u00bd cup broccoli florets (steamed or raw)<br \/>\n2 Tablespoons chopped cilantro leaves<br \/>\n\u00bd cup sliced cucumber<br \/>\n\u00bd cup alfalfa sprouts<br \/>\n\u00bc cup chopped green peppers<\/p>\n<p>Salad dressing of choice (recommended: Vegan Italian Herb Dressing)<\/p>\n<p>Toss salad ingredients together.<\/p>\n<p><strong>Fruit Lover<\/strong><\/p>\n<p>2 cups spinach<br \/>\n\u00bd cup blueberries<br \/>\n\u00bd cup chopped strawberries<br \/>\n\u00bd cup mandarin oranges<br \/>\n\u00bc cup sliced almonds<br \/>\n\u00bc cup crushed walnuts<br \/>\n\u00bc cup banana chips<br \/>\n\u00bc cup dehydrated apple chips<br \/>\nBalsamic dressing to taste<\/p>\n<p>Toss salad ingredients together.<\/p>\n<p><strong>Cuban Salad<\/strong><\/p>\n<p>2 cups iceberg lettuce<br \/>\n1 cup wedged tomatoes<br \/>\n\u00bc cup green olives<br \/>\n\u00bc cup sliced onions<\/p>\n<p>Dressing:<br \/>\nVegetarian Worcestershire<br \/>\nLemon Juice<br \/>\nGarlic<\/p>\n<p>Toss salad ingredients and add dressing ingredients to taste.<\/p>\n<p><strong>Hummus Salad<\/strong><\/p>\n<p>2 cups mixed greens<br \/>\n\u00bc cup chopped tomato<br \/>\n\u00bc cup sliced red onion<br \/>\n\u215b cup pepperoncini<br \/>\n\u215b cup kalamata olives<br \/>\n\u00bc cup sunflower sprouts<br \/>\n\u00bc cup hummus<br \/>\n2 Tablespoons olive oil<\/p>\n<p>Toss salad ingredients together.<\/p>\n<p>Broccoli Slaw Salad<br \/>\n2 cups raw broccoli<br \/>\n\u00bd cup Vegenaise or other vegan mayo<br \/>\nJuice of \u00bd lemon<br \/>\n\u00bd cup sunflower seeds<br \/>\n\u00bd cup craisins<br \/>\n2 Tablespoons apple cider vinegar<\/p>\n<p>Mix all ingredients thoroughly.<\/p>\n<p><strong>Texan Bean Salad<\/strong><\/p>\n<p>\u00bd cup black beans<br \/>\n\u00bd cup red beans<br \/>\n\u00bd cup corn kernels<br \/>\n\u00bc cup red onion<br \/>\n14.5 ounce can diced tomatoes<br \/>\nVegan Italian dressing to taste<\/p>\n<p>Toss salad ingredients together.<\/p>\n<p>Lily wrote this article while doing an internship with The Vegetarian Resource Group.
