{"id":7744,"date":"2015-08-07T12:56:46","date_gmt":"2015-08-07T16:56:46","guid":{"rendered":"http:\/\/www.vrg.org\/blog\/?p=7744"},"modified":"2015-08-07T12:56:46","modified_gmt":"2015-08-07T16:56:46","slug":"whats-for-dessert","status":"publish","type":"post","link":"https:\/\/www.vrg.org\/blog\/2015\/08\/07\/whats-for-dessert\/","title":{"rendered":"What\u2019s for Dessert?"},"content":{"rendered":"<p>By Lily Donofrio<\/p>\n<p><strong>Cheesecake<\/strong><br \/>\n(Serves 8)<\/p>\n<p>Crust:<br \/>\n\u00bd cup melted vegan margarine<br \/>\n2 cups raw almonds thoroughly crushed<\/p>\n<p>Filling:<br \/>\n\u00bd cup almonds<br \/>\n\u00bd cup coconut milk<br \/>\n2 Tablespoons melted coconut oil<br \/>\n3 Tablespoons lemon juice<br \/>\n2 teaspoons vanilla extract<br \/>\n3 Tablespoons agave nectar<\/p>\n<p>Add-Ins: Cocoa powder, cherries, caramel, peanut butter, blueberries, or whatever you desire.<\/p>\n<p>Blend filling ingredients together until smooth. Layer the crust in a pie pan and press down until stuck to the sides and even. Pour the filling onto the crust. Place your desired add-in on top and put in the freezer until solid. Enjoy!<\/p>\n<p><strong>Avocado Mug Cake<\/strong><br \/>\n(Serves 1)<\/p>\n<p>2 Tablespoons mashed avocado<br \/>\n4 Tablespoons flour<br \/>\n3 Tablespoons organic sugar<br \/>\n\u00bd Tablespoon baking powder<br \/>\n2\u00bd Tablespoons almond milk<br \/>\n\u00bd Tablespoon vegetable oil<\/p>\n<p>Mix ingredients together and place in large mug. Place in microwave for 1-1:30 minutes.<\/p>\n<p><strong>Pan Fried Cinnamon Bananas<\/strong><br \/>\n(Serves 1)<\/p>\n<p>Cut 1 banana into medium slices.<br \/>\nCoat slices in cinnamon and sugar.<br \/>\nPlace in pan lightly coated with oil over medium heat.<br \/>\nPlace banana pieces in pan and flip after about 1 min.<br \/>\nCook other side for another minute.<\/p>\n<p><strong>Peanut Butter Cookies<\/strong><br \/>\n(Makes about 2 dozen cookies)<\/p>\n<p>1\u00bd cups of all purpose flour<br \/>\n\u00bd cups brown sugar<br \/>\n\u00be cup chunky peanut butter<br \/>\n\u00bd cup melted vegetable shortening<br \/>\n1 teaspoon baking powder<br \/>\n\u00bd teaspoon baking soda<br \/>\n1 Tablespoon cinnamon<\/p>\n<p>Preheat oven to 350 degrees. Mix ingredients together thoroughly into a dough. Spoon out and form into balls. Place balls on a greased baking sheet, spread out evenly. Press balls down with a fork to flatten while leaving an impression. Bake for 15 minutes or until soft and golden brown.<\/p>\n<p><strong>Cinnamon Apples<\/strong><br \/>\n(Serves 1)<\/p>\n<p>1 honey crisp apple sliced<br \/>\n2 Tablespoons pure maple syrup<br \/>\n\u00bd Tablespoon cinnamon<br \/>\n\u00bd teaspoon nutmeg<br \/>\n\u00bd teaspoon cloves<br \/>\n\u00bd teaspoon ginger powder<br \/>\n1 Tablespoon lemon juice<\/p>\n<p>Mix all the ingredients together, pour into a small pan, and bake at 350 degrees for 10 minutes or until soft.<\/p>\n<p><strong>Mashed Sweet Potato<\/strong><br \/>\n(Serves 1)<\/p>\n<p>1 cooked sweet potato, soft enough to pierce all the way through with a fork<br \/>\n2 Tablespoons pure maple syrup<br \/>\n\u00bd teaspoon cloves<br \/>\n\u00bd teaspoon ginger powder<br \/>\n1 Tablespoon cinnamon<\/p>\n<p>Peel the skin off of the sweet potato, mash, and then mix in all of the other ingredients. Put in a dish and sprinkle on topping (below).
