This vegan cookbook can be purchased from The Vegetarian Resource Group online: <a href=\"http:\/\/www.vrg.org\/catalog\/\">http:\/\/www.vrg.org\/catalog\/<\/a> or by sending $21 (including postage\/handling) to Vegetarian Resource Group, PO Box 1463, Baltimore, MD 21203.<\/p>\n<p><strong>Polish Plum and Rhubarb Soup<\/strong><br \/>\n(Serves 6)<br \/>\n1 pound plums, pitted and chopped<br \/>\n1 pound rhubarb, chopped<br \/>\n10 cups water<br \/>\n\u00bc cup plus 1 Tablespoon apple juice concentrate<br \/>\n\u00bc teaspoon clove powder<br \/>\n1\u00bd teaspoons cinnamon <\/p>\n<p>Place all the ingredients in a large pot and bring to a boil. Lower heat, cover pot, and simmer for 20 minutes. Serve hot.<\/p>\n<p><strong>Turkish Mandarin Salad<\/strong><br \/>\n(Serves 5)<br \/>\nTwo 10\u00bd ounce cans Mandarin oranges, drained<br \/>\n\u00bd Spanish onion, peeled and finely chopped<br \/>\n\u00bc cup pitted black olives, chopped<br \/>\n\u00bc cup pitted green olives, chopped<br \/>\n\u00bd teaspoon coriander<br \/>\n\u00bd teaspoon paprika<br \/>\nSalt and pepper to taste<\/p>\n<p>Toss all the ingredients together in a large bowl. Chill and serve over a bed of lettuce.<\/p>\n<p><strong>Romanian Sweet Pasta<\/strong><br \/>\n(Serves 8)<br \/>\n1 pound eggless pasta<br \/>\n12 cups water<br \/>\n1 cup maple syrup<br \/>\n\u00bd cup walnuts, ground or 1\/3 cup poppy seeds, ground<br \/>\n\u00bd teaspoon lemon rind, minced<br \/>\n1\u00bd cup raisins<br \/>\n\u00bd teaspoon clove powder<br \/>\n1 teaspoon cinnamon<\/p>\n<p>Cook pasta in boiling water until done. Drain.<\/p>\n<p>Heat maple syrup and walnuts or poppy seeds in a large pot over medium heat for 2 minutes. Add lemon rind, raisins, clove powder, and cinnamon. Stir and continue cooking for 3 more minutes. Add cooked pasta.
