Ivy said, &#8220;It was the perfect breakfast!&#8221;<\/p>\n<p><strong>Sweet Potato Tofu Scramble<\/strong> (serves 2)<\/p>\n<p>Ingredients (these are estimates):<\/p>\n<p>2 medium sweet potatoes, cubed<br \/>\n1 cup mushrooms, sliced<br \/>\n1\/2 sweet onion, chopped<br \/>\n2 Tablespoons olive oil<br \/>\n1\/2 block of extra firm tofu, pressed well<br \/>\n1 cup spinach<br \/>\n3-4 Tablespoons lemon juice<br \/>\nSeasonings of your choice<br \/>\nOptional: tomatoes or salsa to top<\/p>\n<p>Instructions:<br \/>\nCook sweet potatoes, mushrooms, and onion in olive oil in large skillet over high-medium heat until sweet potatoes start to brown. Crumble tofu on top. Add spinach and lemon juice.
