HOPE DRAGSETH AT SCRIPPS COLLEGE WINS $2,500 VEGETARIAN RESOURCE GROUP SCHOLARSHIP
Hope attends Scripps College, which is part of the Claremont Colleges, a five school consortium. She secured a complete plant-based menu at her college’s annual sustainability summit and organized a panel at Stanford’s Food4Thought Conference addressing issues about seafood. Drawing on academic research and her experience as a vegetarian collegiate cross country athlete, she led a teach-in, including a cooking demo, for student athletes concerning a plant-based diet. Hope is planning future workshops with registered dietitians to ensure that students have accurate information concerning vegan diets. A reference said, “I am very lucky to work with someone as driven as she is.”
