Delicious Vegan Recipes Featuring Apples

Now that we’re in apple season, we thought we’d share some delicious vegan recipes highlighting apples. Enjoy!

Sweet Rainbow Delight (from Meatless Meals for Working People)
(Serves 6)

3 apples, grated
3 carrots, grated
1/3 cup shredded coconut
½ cup raisins or chopped dates

Toss all the ingredients together in a bowl and serve.

Apple Slaw (from Vegans Know How to Party)
(Serves 10)

4 cups peeled, cored, and chopped Granny Smith Apples
3 Tablespoons cider vinegar
½ cup silken tofu
1 cup soymilk
1 Tablespoon lemon juice
1 Tablespoon spicy prepared mustard
1 Tablespoon organic sugar
½ teaspoon ginger powder
3 cups shredded green cabbage
3 cups shredded red cabbage
1 cup shredded carrots
½ cup thinly sliced green onion

Place apples in a large glass bowl and toss with 2 Tablespoons cider vinegar. Set aside. In a blender or food processor canister, blend the remaining 1 Tablespoon cider vinegar and tofu, for 30 seconds. Add soymilk, lemon juice, mustard, sugar, ginger, and blend for 1 minute or until smooth and creamy. Pour the mixture over the apples and toss to combine. Cover apple mixture and chill for at least 30 minutes.
In a large bowl, place the remaining ingredients, pour the apple mixture over the top, and toss gently to combine. Allow slaw to chill for 20 minutes before serving.

Apples and Lima Beans (from Conveniently Vegan)
(Serves 4)

10-ounce package frozen lima beans
3 apples, peeled, cored, and chopped
Small onion, finely chopped
1 cup water
½ teaspoon cinnamon
¼ teaspoon nutmeg

Heat all the ingredients in a covered medium-size pot over medium-high heat for 10 minutes. Uncover pot and continue to cook 10 minutes longer. Serve warm.

Great Sage Benefit Day

Great Sage is a vegan restaurant which is part of the Conscious Corner located in Clarksville, Maryland. Conscious Corner is a family of businesses dedicated to promoting healthy and mindful living by focusing on animal welfare, the environment, and community. Great Sage’s bold menu features international flavors and organic ingredients with dishes such as their French Onion Burger, Pumpkin Empanadas, and Sage’s Famous Carrot Cake. Every Thursday, Great Sage hosts a live music event to feature local musicians in the area. Along with supporting local musicians, Great Sage also supports non-profit organizations by hosting benefit days. On September 27th, 2015, Great Sage hosted a benefit day for The Vegetarian Resource Group to which they donated 10% of proceeds of the day’s sales. A fellow volunteer and I handed out our Vegetarian Journal and other literature to anybody who was interested. Several patrons visited our table with inquiries about veganism and vegetarianism, other local restaurants, and about VRG itself. People were particularly interested in the local restaurant guide, and the younger restaurant-goers enjoyed VRG’s coloring books. It was a pleasure to represent VRG that day in a welcoming and warm atmosphere at Great Sage.

Pumpkin Microwave Recipes!

Pumpkins and pumpkin purée can be found in stores right now. Here’s some pumpkin recipes to enjoy during this season.

Pumpkin Custard (from Vegan Microwave Cookbook, by Chef Nancy Berkoff)
(Serves 6-8)

Mix 1 can (8 ounces) of unsweetened pumpkin purée with 1 cup of silken tofu in a medium bowl. Flavor with ¼ cup maple syrup, 2 teaspoons cinnamon, and 1 teaspoon nutmeg. Mix well. Microwave on HIGH for 5 minutes or until heated through. Eat the custard on its own or with your favorite vegan gingersnaps, graham crackers, or other cookies. You can also purchase a ready-to-use graham cracker crust, pour in the pumpkin custard, and refrigerate for 1 hour for a pumpkin custard pie.

Pumpkin Bread (from Vegans Know How to Party, by Chef Nancy Berkoff)
(Makes a 9 x 5-inch or 8 x 4-inch loaf pan with 10 slices)

1 cup all-purpose flour
¾ cup organic sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ginger powder
½ teaspoon nutmeg
¼ teaspoon clove powder
½ cup oil
4 Tablespoons silken tofu
½ cup chopped walnuts, almonds, or mixed nuts (optional)
1 cup canned unsweetened pumpkin
Vegetable oil spray

In a medium-size mixing bowl, mix all the ingredients (except the oil spray) until well combined.
Spray a loaf pan with vegetable oil. Spread batter evenly in the pan.
Place an inverted shallow bowl or saucer in the center of the microwave or use a microwave baking rack. Place the loaf pan on the bowl or rack. Microwave on MEDIUM for 9 minutes. Rotate and microwave on HIGH for 2-5 minutes. Check for doneness with a toothpick inserted in the center.

Note: If possible, use a loaf pan with straight, rather than sloped sides for microwave baking.

Variations:
Applesauce Bread: use 1 cup unsweetened applesauce to replace the pumpkin.
Carrot Bread: use 2 cups finely grated fresh carrots instead of the pumpkin.
Zucchini Bread: use 1½ cups finely grated fresh, unpeeled zucchini to replace the pumpkin.

Vegan Pre-Thanksgiving Potluck in Baltimore, Maryland on Sunday, November 22, 2015

The Vegetarian Resource Group and Baltimore Vegan Drinks are sponsoring a vegan Pre-Thanksgiving potluck on Sunday, November 22, 2015 in Baltimore, Maryland. The event begins at 5 pm and is held at North Baltimore Mennonite Church, 4615 Roland Ave, Baltimore, Maryland 21210. Admission is $4 per adult; children are admitted free. Bring a vegan dish – made without meat, fish, fowl, milk, cheese, eggs, honey, or other animal-derived ingredients – that serves four as a contribution from each member of your party. We encourage everyone to bring their own plate and utensils to reduce waste but will have some disposable ones available. Finally, we will be collecting non-perishable vegetarian canned food items to donate to the church, who will then distribute it to those in need.

NATURAL PRODUCTS EXPO EAST by: Hana Takemoto

The first item handed to me when I walked into the Baltimore Convention Center for the Natural Products Expo East on September 17th, 2015 was a free cookie sample. What a pleasant start to my visit! While not open to consumers, the 2015 Natural Products Expo East trade show and conference attracted over 25,000 attendees from independent retailers to big box chains searching for products to sell to consumers. These attendees viewed over a thousand exhibiting companies representing the natural, organic and healthy living marketplace. Their website describes the Natural Products Expo East as “an event focused on innovative products, sustainability and growth opportunities in the natural products industry.”

The Vegetarian Resource Group’s booth was situated with other vegan-friendly company booths. One part of my experience at the Expo was staying at the VRG booth to offer information about our organization and about veganism to interested attendees. The people who approached the booth were curious and gladly flipped through some of our print resources. The second part of my experience at the Expo was walking around the immense showrooms. Booths of companies selling a vast variety of products (not all of which were vegan or vegetarian) packed these showrooms. Representing VRG, we visited a number of these booths and sampled some delicious and interesting vegan foods, some of which we noted for potential Veggie Bits reviews in future issues of Vegetarian Journal. Walking around the show floors, I noticed the sheer number of booths and attendees that filled the space. It was heartening to see the popularity of vegan products, ranging from cosmetics to frozen meals to snacks. I noticed some novel products such as enhanced waters, floral ingredients, and natural gum, but there were also plenty of the standard meat replacements, vegan cheeses, chips, bars, and more. The showrooms were filled with small, new and up-and-coming companies but also large, well-known companies.

I felt fortunate to witness an event in which a diverse group of people gathered into one community to share their interests in natural products, but most of all, it was extremely encouraging to see how some companies took their passion for veganism and transmitted the energy into sharing the vegan message.
