Vegetarian Journal DISPLAYED IN WAITING ROOM
Your journal is a wonderful resource for our patients. We display it in our waiting room, and include it in our recommended reading list. Health Institute at White Flint offers preventive medicine and nutrition services including classes on vegetarian cooking. We appreciate not only the Vegetarian Journal, but the many projects of The Vegetarian Resource Group.

THANK YOU!
The Vegetarian Journal is excellent. I like the simple recipes with the available ingredients. May the periodical continue to flourish!

CHROME FIXTURE CLEANER
Thank you! Thank you! Thank you! For years I had been trying different chemicals to remove soap and stain buildup on chrome fixtures. Nothing worked too well against the hard water buildup we have here.

What a surprise to find the answer in the May/June 1992 issue of Vegetarian Journal. I will forever be grateful for the Vinegar Institute's suggestion to clean "with a mixture of one teaspoon salt dissolved in two Tablespoons of white vinegar." It works!

Thanks for providing such helpful information. I am one happy subscriber!

SOY PRODUCTS SERVED AT THE UNIVERSITY OF VIRGINIA
Thought you might like to know that the University of Virginia in Charlottesville can be added to your list of universities offering vegetarian meals.

I deliver tofu and tempeh (that my friends and I make at Twin Oaks Community Foods) to the University once a week. I've been told that the University now offers one vegetarian option for lunch and dinner every day.

VEGETARIAN MEALS AT THE UNIVERSITY OF PENNSYLVANIA
I am writing in response to the article "Universities/Colleges/Schools Offering Vegetarian Meals" which appeared in the September/October, 1992, issue of Vegetarian Journal. I have been a member of The Vegetarian Resource Group since I started my new position as Nutrition Manager at the University of Pennsylvania in the fall of 1991.

When I came to the University of Pennsylvania, I was over-whelmed with requests from students to meet with me and discuss vegetarian meals (word of the new vegetarian nutritionist spread quickly). I saw a wonderful opportunity and tremendous responsibility to educate the students on healthy, well-rounded vegetarian eating. Repeatedly, I heard complaints about the lack of variety and limited choices for vegetarians...

The vegetarian menu for the 1992-93 school year includes daily one bean dish, one pasta dish, one grain dish, and one vegetarian entree that alternates at lunch and dinner... In addition, we have one "meatless" item served on the main serving line at dinner. When meat items such as sloppy Joes, tacos, and macaroni and beef casserole are served, there is a meatless version of the item served alongside it. Stir frys are always available upon request. Even the Faculty Club will be serving vegetarian dishes.

In September, all Dining Services cooks had a training session on vegetarian cooking and the vegetarian concept. The new program will not succeed without their support.

I enjoy your publication and efforts very much and encourage my students to do the same.

Jill F. Nutrition Manager, University of Pennsylvania, Pennsylvania
